Battlestar Galactica
Breaking Bad
Sanctuary
Heroes
The 4400 (if you're a sci-fi nut, see it, but if you're so-so, don't bother)
Terminator: The Sarah Connor Chronicles
Alias (?)

and then other shows that don't fit those genres...

Deadwood
Entourage
House
Oz
Rome
Robin Hood
Top Gear
Band of Brothers (anyone not seen this yet?)
The Wire (I can't vouch for this personally, but apparently it's awesome)
Macgyver

Comedy:
Arrested Development
Black Books
Red Dwarf
QI
The IT Crowd
The Office (UK)
Fawlty Towers
The Mighty Boosh

Cartoons:
Frisky Dingo
Aqua Teen Hunger Force
Sea Lab 2021
The Venture Brothers
Harvey Birdman
Metalocalypse
X-men

whatever makes it past your filter should hold you in good stead for a while, unless you watch entire seasons in one day...

Alars Basically went through my list,

Add NCIS
Firefly
Bones
Torchwood

if your willing to watch some anime I would add

Baccano (1920's/30's Mafia with an Elixer of Immortality thrown in)
Black Lagoon (Sett in South East Asia its about a group of smugglers/mercenaries, better in the English dub because most of the characters are not Japanese)
Samurai 7 (The Great Seven Samurai Movie remade in a steampunk series)

Some other good ones not 100% sure they're your style.
Sword of the Stranger
Eden of the East
Last Exile

Other than that there's the classics
Ghost in the Shell
Cowboy Bebop
Samurai Champloo

I've been watching Mental lately and becoming a fan. It's like bizzaro House, but the nature of the show means it has potential to come up with some literally quite crazy plots, although each season finale of House tends to turn out that way.

Nurse Jackie has also started well. There has been an incredible glut of medical dramas this season, seemingly all pointing toward the popularity of a certain diagnostician. Edie Falco plays Jackie, an ER nurse with no time for sticking to the rules and carrying her fair share of vices. As you might expect of a Showtime hospital, it's grittier and darker than the ones in free to air shows, but not humourless either.

If you're into those recent short-run British comedies, you should go back and check out Coupling. The dialogue is just fantastic and scenes often play out twice to show the double layers of meaning. Writer Steven Moffat went on to pen some of the more memorable Doctor Who episodes (Actually, Blink is one of the more memorable episodes of any show) and is now in charge of the forthcoming series.

Another... thing... worth noting is Look Around You. If you've ever seen the unintentional humour in a high-school demonstrational video, you'll get where this is coming from.
